Is it illegal for me to hold my phone in my hand and use the speakerphone to talk on? Or is it only illegal if I hold it up to my ear?

You can use the speakerphone function on your cell phone, however, you can't hold the phone in your hand. Per California Vehicle Code Section 23123(a) -

"A person shall not drive a motor vehicle while using a wireless telephone unless that telephone is specifically designed and configured to allow hands-free listening and talking, and is used in that manner while driving."

Hands-free is just that - hands are free!
